In a medium bowl, whisk together the flour, baking soda, spices, orange peel, and salt.
In a large bowl, beat the sugars, shortening, molasses, and egg until combined.
Slowly beat dry mixture into wet mixture. (The dough will be crumbly - I always fear that there's TOO MUCH DRY, but it comes out okay)
Chill the dough overnight.
Preheat the oven to 350 degrees F.
Roll dough, about 1 1/2 teaspoons at a time (slightly heaping tablespoon), into balls and place on a parchmented cookie sheet. [Small cookie scoop works fine.]
Bake in a 350 degree oven for 10-12 minutes, until edges begin to brown. (My oven says 11 minutes are perfect for the softer ones and 12 minutes are great for the crispier ones)
Let the cookies cool on the baking sheet for 10 minutes, then transfer to wire racks to cool completely.
